½ cup brown sugar
1 teaspoon pure vanilla extract
2 cups flour
¼ cup corn starch
½ cup finely chopped walnuts or pecans
3 tablespoons sugar
½ to 1 (8 oz) jar Blueberry jam or preserves
BEAT butter, brown sugar, and vanilla thoroughly
using an electric mixer, gradually blend in flour
And corn starch.
Add finely chopped nuts and mix.
FORM mixture into 1-inch balls and place on
un-greased baking sheets.
Pour sugar on small plate.
Dip bottom of drinking Glass in sugar and
gently press down on each Cookie to
partially flatten them. Make a small indentation
in the center of each cookie by pressing the
center of each cookie with tip of teaspoon.
Put a small scoop (about ½ tsp) blueberry jam
in the center of each cookie.
BAKE in 300 degree oven for
20 to 30 minutes, or until bottoms begin
to brown.
COOL for 5 minutes; remove to a wire rack
to cool completely.
